Caramelised Red Onion, Tomato & Feta Tart

Filling
2 red onions
2 tbsp balsamic vinegar
1 tbsp honey
2 tomatoes
100g feta cheese
5 eggs
100ml creme fraiche
Small bunch of basil (optional)
Pastry
110g butter
100g plain flour
80g wholemeal flour
1 egg
Start by making the pastry: Cut butter into small cubes and mix with rest of pastry ingredients. Start mixing by hand and bring together in a ball.
Wrap in cling film then refrigerate dough for 30 minutes.
Peel red onions, half and cut into thin slices.
Slice tomatoes. Crumble feta in a bowl.
Beat eggs together with creme fraiche, salt & pepper and finely chopped basil.
Turn on oven to 175 degrees fan.
Roll out the dough in a little wholemeal flour so that it fits a tart dish of approximately 24-26cm in diameter. Prick the base with a fork.
Bake the base in the oven for 10 minutes then remove from oven.
While the base is baking, warm up some oil in a pan (low - medium heat) and add onions. Keep turning until they become soft.
Add balsamic vinegar and honey. Let the onions sauté on a low heat until they are soft and become caramelised (the longer cooking the better so you can start this process at an earlier time if preferred).
Spread half of red onions and crumbled feta on the bottom. Add egg mixture. Top with remaining red onion, feta and tomato slices.
Bake tart for approx 25-30 minutes or until egg mixture is firm and slightly golden.
Serve up the tart. It’s perfect with a side salad and potatoes :)
