Med Style tomato & feta garlic TOAST with tahini salad

4 big tomatoes

Feta cheese

Good quality olive oil

Oregano / thyme

1 garlic clove

Baguette style bread / sourdough

Rocket

Tahini Sauce

60g tahini * 

2 tbsp soy sauce

1.5 tbsp rice vinegar

1.5 tbsp maple syrup/honey

* Good tahini is key! I’ve been recommended Al Nakhil Tahini

  1. Grate tomatoes (better than blending so they retain some texture). Drain the excess liquid

  2. Add plenty of oregano and olive oil

  3. Toast bread and rub a garlic clove on toasted bread for extra flavour (optional!)

  4. Spoon on tomatoes and top with crumbled feta

  5. Mix tahini sauce ingredients together. It will become a paste but add a little warm water and keep stirring then it will become a sauce. Drizzle over rocket for the ultimate salad sauce. I love this for lunch!
